- 6 tablespoons sugar
- 3 tablespoons cornstarch
- 1 teaspoon pure vanilla extract
- Pinch of salt
- 3 cups of milk
- 6 ounces white chocolate, chopped
- 1 tablespoons unsalted butter, cut into small pieces
- ¼ cup of chopped pistachios
In a medium saucepan, whisk together sugar, cornstarch, and salt. Whisk 1 cup milk into dry ingredients until cornstarch is completely dissolved.
Place saucepan over medium heat, add in the remainder 2 cups of milk and vanilla extract. Cook, whisking constantly, until mixture comes to a boil and begins to thicken. Add in the white chocolate and cook, whisking until chocolate is melted. Remove from heat and whisk in butter until melted.
Pour pudding into 6 dessert cups and garnish with the pistachios. Refrigerate until completely set, about 1 hour.
