PURSLANE SALAD WITH YOGURT DRESSING

 Ingredients:

  • 2 large bunches of purslane – about 4 cups – pricked, washed & dried well
  • 2 cups of yogurt – regular yogurt not strained
  • 3 cloves of garlic – minced fine
  • 1 teaspoon of ginger – minced fine
  • 2 tablespoons of olive oil
  • Salt for seasoning
  • 1 tablespoon of red pepper flakes

Preparation:

  1. Pick the small head of the purslane from the stem, wash well and let completely dry.
  2. In a small mixing bowl, add in the yogurt, grated garlic, ginger, salt, olive oil and mix well using a whisk. The yogurt will become runny, like a yogurt drink.
  3. In a mixing bowl, pour the yogurt sauce over the purslane and mix gently until all parts of the purslane is cover with yogurt.
  4. Place into a serving bowl and serve and sprinkle red pepper flakes over the top.
