RED LENTIL SOUP
My favorite a simple, quick and very delicious Red Lentil Soup. It is an easy simple recipe and always a favorite in my house hold. Simply put everything together add water, salt and let cook until completely soft. Run through a blender and serve hot. Garnish with lemon juice and sprinkle of mint.
Everything into the pot add water and let come a nice boil.

Red Lentil Soup
8 servings generously
Ingredients:
- 2 medium onion – diced
- 2 carrots – diced
- 3 tablespoons of olive oil
- 1 cup of red lentil (washed & drained)
- 1/4 cup of white rice (washed & drained)
- 1 cup of tomato sauce
- 1 tablespoon of tomato paste
- 6-8 cups of cold water or chicken stock
- salt for seasoning
- lemon juice for flavor
- dry mint for garnishing
Preparation:
- In a deep cooking pot, heats up the olive oil add in the chopped onions and saute until soft 2 – 3 minutes.
- Add in the carrots, tomato sauce & tomato paste mix all and let sauté for another minute.
- Add in the red lentils and rice. Add in your 6 cups of water and salt leave to bring up to boil. About 25-30 minutes. At the point the water might have been absorbed, add in your additional 2 cups and bring up to boil another 8-10 minutes.
- The lentils & rice will be completely soft and/or completely dissolved in the water. Remove from heat. Cool for 5 minutes.
- Using a hand held electrical blender, puree the lentils until everything is liquefied. Serve with lemon juice and sprinkle of dry mint.
