VANILLA PUDDING CAKE
This posting is suppose to be of the walnut rolls from my last post, but it is not an easy task to get the recipe correct. My mom has been making the rolls for years and she knows all the ingredients by heart and when I asked her in term of measurements and cups, she looked at my with this HUH?? look on her face. I have all the ingredients to make the rolls, but I have to make it myself to explain to you how it is done exactly. This might take me a while, so please give me some time, I promise I will post the recipe! Even if I have to make the rolls several times! So in the mean time, lets enjoy a slice of this vanilla pudding cake.
I had made this cake before, but I wanted to give another shot. I excluded some of the ingredients I had used before and opted for a cleaner Vanilla Pudding Cake. As you might already know, my husband loves puddings so this is up his ally but except that it is cake instead of pudding. It’s quite funny actually I simply can not satisfy his love for puddings! He loves his milk just as much as my little angle loves her.
A slice here and a slice their, just to satisfy my cake craving. I impatiently waited for this cake to cook, once cooked and cooled, I cut two large slices and just took a bite. Oh yes I had a nice decaf cup of Joe to along with it too, it was sort of like my 5:00 o’clock tea. As if that was not enough, I grabbed the JIF peanut butter out of the cupboard and generously spread the PB on top of the cake! Was I in heaven, oh was I in heaven!
I must admit I just love simple good cakes!
Vanilla Pudding Cake

Ingredients

1 box ready to use yellow cake mix (any brand)

1 pkg of instant vanilla pudding (recipe calls for a 3.4oz)

1 cup of milk

1/2 cup of sour cream/yogurt

4 eggs
(recipe called for morsels and walnuts, I opted to not use those ingredients to achieve a nice clean cake)
Preparation
- FOR CAKE:
PREHEAToven to 350° F. Grease and flour 12-cup Bundt pan or other tube pan. - COMBINE cake mix, pudding mix, milk, sour cream and eggs in large mixer bowl. Beat on low speed just until blended. Beat on high speed for 2 minutes. Stir in morsels and nuts. Pour into prepared baking pan.
- BAKE for 55 to 65 minutes or until wooden pick inserted in cake comes out clean.
- COOL in pan on wire rack for 20 minutes. Invert onto wire rack to cool completely.

this is such a great recipe to make for guests if you have to prepare a last min dinner. it looks lovely.

I’ve been looking for this recipe quite a while now… I used to make it ages ago as a base for rum cake, once it was baked I was melting butter with sugar and rum and pouring over the cake. Thanks for sharing and Happy New Year!
