Tomatoe Kirby Mint Sa LIGHT SUMMER SALADAfter a long hiatus, it is time to get back on track.  I have come to notice that I have missed a lot things in the blogging world and have trully missed blogging as well.  On top of all I missed sharing my cooking experiences with you all.  Honestly all I can say is that I have not had oppurtunity to cook in the last few months.  Too much was and is still going on, all good I promise and in due time I will share.  For now I am back and I thank you so much for the wonderful e-mails and comments, they mean so much to me.

Manouri Cheese LIGHT SUMMER SALAD

So, since I’ve missed spring into summer, I am going to jump right into a light summer recipe.  I hope you all enjoy.

Tomato, Kirby & Manouri Cheese Summer Salad

Ingredients:

  • 2 medium size kirbies (1 large cucumber)
  • 1 medium size tomato
  • 1/4 cup of manouri cheese (feta or goat cheese)

Dressing:

  • 1/2 lemon juice
  • 3-4 leaves of mint
  • 1/4 cup of olive oil
  • salt for taste

Preparation:

  1. Into a mixing a bowl, add in your diced the kirbies, I cut them in half and cut them in a diagonal.
  2. Dice the tomatoes and add them in as well, along with the diced manouri cheese. If you prefer you may use feta or goat cheese.
  3. For the Dressing: Into a blender throw in the mint leaves, 1/2 of a lemons juice, adding in the olive oil and salt.  Blend all until the mint is pureed and everything is mixed.  You will get this nice lime color this is because of the mint mixed with acid of the lemon.
  4. Pour over your salad and toss. Serve cold. 

Note: If serving later in the day, leave the dressing a side and pour over the salad when you are ready to serve.
