Saturday Night Dinner & Wii

This past weekend we had my cousin and my husbands brother over for dinner. It has been while since we had seen each especially after the New Year. Out biggest excuse besides food together was to play Wii! How much fun is Wii?
For anyone who has played Wii or Wii fit would know what I am talking about. It really is so much fun, it makes you laugh so hard that you have tears in your eye. I don’t what to laught; at myself or the game it self! I’ve even managed to get my mother and father to play!

Barley & Red Lentil Soup
Pink Kidney Bean Salad - Piyaz
Ingredients
- 1 can of pink kidney beans (any brand)
- 1 medium size shallot
- 1 medium yellow bell pepper (any bell pepper will do)
- 1/2 a lemon’s juice
- 1/4 teaspoon of mint
- 4 tablespoons of olive oilr
- salt as you wish for flavoring
- black pepper
- couple of tablespoons of chopped parsley
Preparation
- Drain and wash the can of beans well. Set a side to drain access water.
- Slice the shallot as you wish – I cut into long thin slices like strips
- Dice the yellow bell pepper and chop the parsley.
- In a bowl mix all the ingredients beans, shallot, bell pepper, parsley. Add in your olive oil, salt, mint, lemon juice and black pepper and toss well.
- Serve chilled – makes for a great appetizer.

Easy & Simple Baba Ganoush
Ingredients
- 1 can of Cortas Brand Baba Ganoush
- 2 teaspoons of tahini sesame paste
- little bit of lemon juice
- little bit of salt for taste
- olive oil to drizzle
Preparation
- Into a mixing bowl – dump the can of baba ganoush – add in the tahini sesame paste, little bit of lemon juice and salt. Mix well.
- Pour into serving bowl drizzle with olive oil.
Note: Baba Ganoush – can be served and eaten as prepared in the can – does not need anything additional really! I just a little bit more of flavoring.

I am the cousin, and I had the pleasure of being at the dinner Wii get together.. and the food was so good as always, loved loved the Kofte and the soup.. and the laughs were a great calorie burner.. !!
