VANILLA PUDDING CAKE

Lately I have not been feeling to well, it might this weather we are having. Cold, warm, freezing, snow, rain – love the snow but I hate the rest. All I want to do after work is come home and crawl underneath the covers read a few good books and watch a few good movies & that has been impossible to do!! Actually this is the first free week night I had in a while.
Once I got off the train, I headed straight to the supermarket. I knew I needed to make yogurt since we had only one cup left. So I bought a gallon of milk along with few other items, then I headed straight home. Put away all my groceries, put the milk in pot over a medium heat, this will be for the yogurt. Home made yogurt will be a separate new post coming up. Yogurt has been the topic at work lately - my co-workers ask me “Ashly you make home made yogurt, how do you do it?” So, I might as well blog about it right?
So, we all know I’m in baking mood, does not help in the “I am going to loose weight process” – but its’ winter who cares right?? I read this recipe taken from VeryBestBaking, on a Portakalagaci - Turkish food blog need to try it. I did not have a chocolate cake ready mix but did have a yellow cake mix. Printed out the recipe from Verybestbaking and make the ingredients to fit a yellow cake mix.
Lately all I’ve been doing, when I have time from a little work escape is reading and catching up on news. But today I decided that, I have to stop watching the news and reading the paper! Its to depressing with to much depressing new on going! Makes me feel so sad! What has our world come to??
Rather I turn all my attention to baking, cooking and just reading blogs! Makes life a little bit more simpler!

Ingredients
adapted from VeryBestBaking ~ Original Recipe ~

1 box ready to use yellow cake mix (any brand)
-
1 pkg of instant vanilla pudding (recipe calls for a 3.4oz)
-
1 cup of milk
-
1/2 cup of sour cream/yogurt
~ I used a can of puck cream -
4 eggs
-
3/4 cup of white chocolate sweet morsels
~ I used nestle toll house brand -
3/4 cup of chopped walnuts
Preparation
- FOR CAKE:
PREHEAToven to 350° F. Grease and flour 12-cup Bundt pan or other tube pan. - COMBINE cake mix, pudding mix, milk, sour cream and eggs in large mixer bowl. Beat on low speed just until blended. Beat on high speed for 2 minutes. Stir in morsels and nuts. Pour into prepared baking pan.
- BAKE for 55 to 65 minutes or until wooden pick inserted in cake comes out clean.
- COOL in pan on wire rack for 20 minutes. Invert onto wire rack to cool completely.
