Veal Osso Buco w/ Celery Root
Winter has officialy arrived with some snow of course and it has gotten really really cold. On days when the weather is so cold, I look forward to cooking a hearty filling comfort food. I had a celeriac in the fridge and a few pieces of veal osso buco from the halal butcher that I had deforsted the night before. I set out to cook one of favorite dishes, this also happens to be one of my fathers favorite dishes.
Veal or beef osso buco is also known as the shank meat or mozat. It consists of a smal size bone in the middle with muscles of meat around it. Osso buco is well known in Italian cooking and is often prepared with wine. It is also prepared in many Middle Eastern dishes in various ways with out the wine. If the osso buco cooked properly it is out of this world good and SOFT! A good way to cook it is with rustic potatoes and vegetables, as well as roasting it in the oven.
So next time you visit your local bucther shop, ask for a couple of slices of these wonderful piece of meat.
