Shepperd Salad w/ Feta Cheese ~ Coban Salatasi

Shepperd salad is one of the most popular summer salad’s in Turkey. It is also a well known and most frequently served salads in Greece, just top the salad with a few kalamata olives. There are also a varies ways of making this salad, the basic idea is incorporate all fresh vegetables and just add some dressing.
A shepperds salad is rarly served with feta a cheese, actually in many Turkish restaurants in Turkey do not serve it with feta cheese. Here in the states, many Turkish restaurants will asks you if you prefer it with feta or without. I like mine with feta cheese, especially with French Feta & Bulgarian Feta & some times Greek Feta. The taste is incredibly different and the best part is dipping into the dressing with a hardy and crusty bread. Hmm Hmm Good!
During Ramadan it is also very important to eat and enjoy the right amount of balanced food. This salad is made with fresh vegetables & provided a good amounts vitamins.
Ingredients:
Serves 2
- 2 medium size kirby’s – aka cucumber (washed & half peeled)
- 2 medium size tomatoes (washed)
- 1 medium yellow bell pepper (this is optional) can use any sort of pepper
- 1 small red onion (again optional – I opted not to use any onions)
- 1/4 cup of crumbled feta
note: Hard feta like French, Bulgarian & Greek Feta’s are much easier to crumble - a handful of chopped parsley
- couple of olives
- sprinkle of nigella & sesame seeds
Dressing:
- 1/4 cup of olive oil (evoo)
- lemon juice (half of a lemon is fine)
- salt
Preparation:
- Dice the cucumbers, tomatoes, peppers, onion and place in to a serving dish.
- Sprinkle the feta cheese and chopped parsley.
- Top it of with the olives and sprinkle some nigella/sesame seeds.
- Prepare the dressing and pour over the top and toss.
- Serve and enjoy!
