KFC Fried Kitchen

It has been a while since my last update.  It has been a quite busy last month and half.  From kitchen problems to getting wisdom teeth removed & past through the busy holiday season. 

Wishing all of you a Happy, Healthy & Prosperous New Year!  As well as a Happy past Eid ~ Gecmis Kurban Bayraminizi kutlarim.

Well my kitchen problems have not been resolved…to long of a story to write. I’m at least back to cooking and I kicked off the New Year with an unbelievable deep fried and oven baked chicken.  Recipe courtesy of Barefoot Contessa from the Food Network.


  • 1 chicken (3-5 pounds) – cut in 8 serving pieces
  • 1 quart buttermilk
  • 2 cups all-purpose flour
  • 1 tablespoon kosher salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon of oregano (my addition) 
  • 3 cups vegetable oil 

Place the chicken pieces in a large bowl and pour the buttermilk over them.  Cover with plastic wrap & refrigerate overnight.   

Day of cooking: Preheat the oven to 350 degrees F.Combine the flour, salt, pepper & oregano in a large bowl. Take the chicken out of the buttermilk and coat each piece thoroughly with the flour mixture. Pour the oil into a large heavy-bottomed stockpot to a depth of 1-inch and heat to 360 degrees F on a thermometer. (If you do not have thermometer – keep the oil in high heat for good 15-20 mins.)Serve with french fries, mash potatoes or oven cooked potatoes wedges.

Working in batches, carefully place several pieces of chicken in the oil and fry for about 3 minutes on each side until the coating is a light golden brown (it will continue to brown in the oven). Don’t crowd the pieces. Remove the chicken from the oil and place each piece on a metal baking rack set on a sheet pan. Allow the oil to return to 360 degrees F before frying the next batch. When all the chicken is fried, bake for 30 to 40 minutes, until the chicken is no longer pink inside.


Side Dish


  • 4-5 medium to large potatoes
  • 1/4 cup of olive oil
  • 3 carrots 
  • 1 tablespoon of kosher salt
  • 1 tablespoon of black pepper

Wash the potatoes really well ( i left the skin on) slice into 4-6 pieces depending on the size you like.  Peel and cut the carrots as well.  Place on olive oiled sheet pan, add salt, pepper and mix.  Cook in the oven for 40-50 minutes until soft.

Serve both warm! Enjoy!
