Just the girls & late lunch

It had been a while since I had my aunts, my cousin & my mom over. Being so far away from them, has been difficult for us to adjust and it still is. I miss them dearly, and when we do get together we share a few long laughs.
My mom left for Turkey this past week and I wanted us together before she left. We had a wonderful time and with a special request by my husband, I made them my deep fried chicken, ohh my my they were in heaven.

Green mixed salad
green leaf lettuce, arugula, thinly sliced leeks, endives & seedless cucumbers
dressing: 1/4 olive oil, 1 whole lemon juice & salt
Oven baked vegetable fries

Ingredients:

3 sweet potatoes (medium size)

3 regular potatoes
-
3 large & thick carrots
-
1/2 cup of olive oil
-
salt & pepper for seasoning
Preparation:
Wash, peel and cut the sweet potatoes and regular potatoes into long strips. Wash and peel the carrots and cutting the carrots on a diagonal creating a nice shape and size. Place all on a baking pan, add olive oil and salt and mix thoroughly. Place in a pre-heated 400 degree oven and bake for 45 – 50 minutes until they are soft.
Oven baked mushrooms & tomatoes
Ingredients:

1 lb (2 cartons of white mushroom)
-
2 shallots
-
2 cloves of garlic
-
1/2 lb (1 prepackaged box) cherry tomatoes
-
1/3 cup of olive oil
-
salt & pepper for seasoning
Preparation:
In a baking or roasting pan, coat the bottom with olive oil. Dice the shallots and garlic and put it on the bottom of the pan. Wash and cut the mushrooms into 4 pieces (quarters) and put into the baking pan. Add olive oil, salt and pepper and mix thoroughly coating all the mushrooms. Bake in a pre-heated 400 degree oven and for 20-25 until the mushrooms turn a nice brown color. Add in the washed and dried cherry tomatoes, bake for another 10-13 minutes until the tomatoes start to pop.
