Bulgur with yogurt for breakfast

Bulgur

I’ve been running around a lot lately and I do not have much time in the mornings for a good breakfast.  It’s usually a bowl of whole wheat cereal with skim milk or yogurt with granola & of course a cup of instant coffee.  The other morning I came across the fine bulgur in the pantry, as I was reaching for some honey.  It dawned on me, why not have a bowl of bulgur with yogurt, honey, fresh/frozen raspberries and cinnamon.  It turned out to be quick, simple and satisfying.

Need:

  • 1/3 cup of fine bulgur
  • 1/3 cup of boiling hot water
  • 1/3 cup of yogurt
  • 1/2 cup of raspberries (fresh or frozen)
  • 2 tablespoons of honey
  • 1 teaspoon of cinnamon

Preparation:

    Place the bulgur in a dish and add the hot water and set a side till the bulgur absorbs the water and softens.  Once the water is absorbed, add on the yogurt and raspberries.  In a small dish mix the honey and cinnamon and drizzle over the top of the mixture.  If you like it really sweet you can add a tablespoon or two of sugar to the boiling water, once the bulgur absorbs the water it will sweeten the flavor.
