Tiramisu & Cups

I’ve been so busy since I start the site that I never had the opportunity to finally finish up the recipe.  Finally tonight, I made sure I had enough time to wrap up everything.  I make tiramisu as often as I can, it really is simple and quick.  A real crowd pleaser as well!  My father loves it with a cup of tea, he refers to it “as the sweet that melts in my mouth,” whenever I hear that sentence from him, I know it time to make some.  

Tiramisu

Need: 

  • 6 - large egg yolks at room temperature
  • 1/2 - cup of sugar
  • 1/2 – teaspoon of turkish vanilla powder
  • 2 – cups of strong brewed espresso (strong coffee is fine as well)
  • 2 – 8oz Mascarpone Cheese
  • 30-40 – italian ladyfingers/ savoiardis
  • 3/4 – cup of chocolate cocoa powder (for top)
  • 1 – large nice serving dish

Preparation:

Whisk the egg yolks and sugar in a deep bowl with an electrical mixer at high speed until it becomes thick and light yellow.  Add in the mascarpone cheese and 1/4 of the cold espresso and whisk until well blended and smooth.

In a separate shallow dish, put the remaining espresso and begin to dip each side of the ladyfingers and being the line the bottom of your dish.  Pour half of the mascarpone cream mixture on top and spread it out with either the back of a large spoon or spatula.  Again a line the top of the mascarpone cheese with the remaining dipped ladyfingers - this will create the second layer.  Pour the rest of the cream on the top of the ladyfingers, again spreading the cream mixture evenly over the dipped ladyfingers.  Cover with plastic wrap and refrigerate overnight or at least a couple of hours.

Before serving, dust with the cocoa powder. To this nicely and evenly, use a thin hand held drainer.  Place the cocoa in the drainer and sprinkle over the top of your dish, tapping it lightly and coating each side and corner.

If you are brewing the coffee in an electrical drip coffee maker, use enough water to make for 4 cups of coffee, with 6 tablespoons of ground coffee or espresso.

Note: please do not make this is LABNE, Labne is sour and does not have the same consistency as the mascarpone, if you can not find mascarpone, use Cream Cheese.

Need:

  • Same Ingredients as above
  • 1/2 cup of roasted sliced almonds

Preparation:

Instead of a lining the ladyfinger into a square dish, I placed them into individual cups.  For one cup I used 2 lady fingers, break them in half, dip them in to the coffee mixture and place them on the sides of the dish.  Pour about 4-5 tablespoons of the mascarpone cream mixture (as mush as you want) into the middle of the dish.  I placed another half dipped ladyfinger on top, dusted it lightly with cocoa and sprinkled it wish some roasted sliced almonds.  (use what ever you have on hand to decorate the cups)
